Tatsu Dallas is the kind of restaurant that makes food critics use words like "transcendent" without a trace of irony, and for once, they're not exaggerating.

Chef Tatsuya Sekiguchi is a fourth-generation sushi master from Saitama Prefecture, and his intimate Deep Ellum counter is a masterclass in Edomae-style tradition — the classical Japanese technique of curing, preserving, and aging seafood that turns each piece of nigiri into something closer to art than appetizer. The seasonal omakase unfolds over roughly two hours: one to two appetizers, thirteen to fifteen pieces of nigiri, a hand roll, miso soup, and dessert. It costs $185 per person, and nobody has ever called it overpriced.
