Tatsu Dallas

Ten seats. One chef. A Michelin star. And a reservation system that opens on the 1st and 15th of each month at 8 AM sharp — set your alarm, because the rest of Dallas already has. Tatsu Dallas is the kind of restaurant that makes food critics use words like "transcendent" without a trace of irony, and for once, they're not exaggerating. Chef Tatsuya Sekiguchi is a fourth-generation sushi master from Saitama Prefecture, and his intimate Deep Ellum counter is a masterclass in Edomae-style tradition — the classical Japanese technique of curing, preserving, and aging seafood that turns each piece of nigiri into something closer to art than appetizer. The seasonal omakase unfolds over roughly two hours: one to two appetizers, thirteen to fifteen pieces of nigiri, a hand roll, miso soup, and dessert. It costs $185 per person, and nobody has ever called it overpriced. Housed in the historic Continental Gin Building at 3309 Elm Street in Deep Ellum. If Tatsu is the reverent temple, Uchi is the brilliant friend who studied in Tokyo, backpacked through Southeast Asia, and came home with recipes that shouldn't work together but absolutely do. James Beard Award-winning Chef Tyson Cole built his reputation on what he calls the "perfect bite" — a philosophy of blending Japanese tradition with global ingredients that results in combinations like scallop carpaccio with coconut and habanero, or tuna sashimi with apple and goat cheese. On paper, it sounds reckless. On the plate, it's genius. The Uptown Maple Avenue location offers multiple ways in: a six-course signature tasting menu, a chef's tasting with daily specials, or the kind of à la carte exploration where you order four things, love all of them, and immediately order four more. The vegetarian tasting proves that meatless Japanese cuisine isn't a compromise — it's a flex.
