Dallas is a long way from salt water and has built one of the strongest seafood scenes in the Southwest anyway. The trick is logistics: claws packed the day they are pulled, halibut on a plane the morning it is landed, and kitchens that plan menus around what actually arrived.

That constraint is the whole discipline. A landlocked seafood kitchen cannot lean on a freezer and still be taken seriously, so the menu moves with the boats. Raw bars double as edible architecture and shellfish towers work as centerpiece and appetiser at once.

Truluck's stone crab is the marquee item, and its story is often stretched in the retelling. Their own wording is more precise.
- Truluck's describes claws being sized, cooked, chilled and packed "within hours", arriving at the restaurants "by the next day".
- The commonly repeated "trap to table in under 24 hours" is a paraphrase rather than the restaurant's own claim.
- Truluck's describes a partnership with a family of crabbers in the Florida Keys, rather than owning fisheries outright.
- Stone crab is seasonal. Ask us what is actually running before you build a dinner around it.
