The room is art-deco western, named for the Texas rancher Hallie Stillwell, and it holds one of the larger wine cellars in the city. Food and beverage is led by Raymond Bocanegra, whose résumé runs through the Broadmoor, the Ritz-Carlton Denver, and Rosewood Miramar Beach.
Cowboy Hour runs 4pm to 6pm daily with half-price cocktails, which is the cheapest way to see the room before committing to a full dinner.
